Both items had an excessive amount of condensation on the wrap used to cover the item. These two items were discarded due to improper cooling methods. In the walk-in: Observed: 1) Pollo Asado temping at 45 degrees F. Item was completely covered with an excessive amount of condensation on wrap. Spoke to person in charge about proper cooling methods. This item still had time to cool to proper temperature.
