2-301.14 — Employees were observed failing to wash their hands when required by the code.
Corrective action: Observed employee not wash hands 1) after handling dirty dishes and not before putting clean dishes away, 2) when entering the kitchen and before prepping salads, 3) after handling raw sausage and donning new gloves. Informed person in charge that hands must be washed after handling soiled equipment, after handling raw meat, and any time the hands become contaminated.
6-301.12 — Hand washing sinks lacked hand washing supplies as required by the code.
Corrective action: Observed the hand sink in the downstairs ice machine area lacking paper towel. Informed person in charge that handwashing supplies must be available to employees during all times of operation. Hand washing sinks were observed being used for activities that were not hand washing. Observed the handwashing sink in the dish pit area storing a paint scraper. Informed person in charge that hand sinks must be only used for handwashing and be easily accessible during operation.
3-501.17 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Observed 1) an open container of buttermilk in the dough area, 2) an open package of salami in the cold holding unit in the gelato area, both held over 24 hours without a date mark. Informed person in charge that any time/temp-controlled foods must be date marked with the day opened or a discard date.
None — 24: 3-501.19(B)(1),(4),(5),(C)(1),(4),(5) Time as a public health control was used without marking foods to indicate when they should be discarded. Observed multiple cooked pizzas stored on top of the oven using time as a control without any indication of a discard time. Informed person in charge that when using time as a control without temperature control, the food must be marked with the time of discard (4 hours).
3-601.12 — Working containers holding food or food ingredients that are removed from their original packages shall be identified with common name.
Corrective action: Observed in house made hot sauce being stored in a container labeled as another product. Informed person in charge that working containers being used need to be labeled correctly to make sure product is not misleading. The container was correctly labeled during the inspection.
3-304.12 — In-use utensils were improperly stored (without the handle above the top of the food, not on a clean surface, not in running water, or not in water of at least 135°F).
Corrective action: Observed 1) scoops in the sugar containers in the dough room, 2) a scoop stored in the sugar in the dough area, both with the handles not stored above the food. Informed person in charge that utensils shall be stored with handles above the food. The handles of the scoopers were moved above the food during the inspection.
6-403.11 — Personal belongings were stored in an unapproved area.
Corrective action: Observed 1) and employee drink stored on a food service rack in the dough area, 2) an employee drink and personal belongings stored over clean dishes in the dish pit area. Informed person in charge that personal items must be in a designated area to prevent contamination. Items were moved during the inspection.
