Corrective action: Observed employees wash veggies and then proceed to food prep without a hand wash in between. Observed employees bring dirty dishes to the dish pit and then continue with food prep without a hand wash in between. Spoke with person in charge about ensuring hands are to be washed in between changing tasks.

Observed employees do several tasks without changing gloves and washing hands. For example, touch soiled equipment, uniform, microwaves, and changing tasks. Education was provided during inspection.
None — 16: 4-602.11(C) Equipment, utensils, and/or food-contact surfaces used in contact with food items that require time/temperature control for safety are not being cleaned at least every 4 hours. Per employees food contact surfaces are being cleaned out every 5 hours. Spoke with person in charge about ensuring food contact surfaces are to be washed, rinsed and sanitized every 4 hours. Education was provided.

Corrective action: Observed a salad bowl sitting directly on top of an uncovered container of salad in the cold holding unit in the kitchen. Spoke with person in charge about removing bowl to prevent the risk of contamination.
4-501.11 — Utensils or equipment were not maintained in good repair or condition.1.) Observed broken freezer next to fry station in the kitchen area.
Corrective action: 1.) Observed a buildup of ice in the freezer next to the broken freezer. Per person in charge a work order has been put in for these items to get repaired.
4-601.11 — (B), and (C) Nonfood contact surfaces of equipment were not kept free of an accumulation of dust, dirt, food residue and other debris.
Corrective action: Observed a buildup of debris in the salad cold holding unit in the kitchen. Spoke with person in charge about cleaning frequency for this item.
