Corrective action: Observed employee use the hand-washing sink for dumping a sanitizer solution bucket. Reviewed with person in charge hand sink usage requirements during inspection.
4-602.12 — The food contact surfaces of cooking and baking equipment shall be cleaned at least every 24 hours.
Corrective action: Person in charge reports cleaning some non-tcs surfaces on a weekly basis. Reviewed cleaning frequency of these surfaces to increase to every 24 hours.
3-305.11 — Food was not stored at least 6 inches above the floor.
Corrective action: Observed food boxes stored on the floor in the walk-in cooler. Boxes were moved off the floor during inspection.
6-501.12 — Physical facilities were not cleaned as often as necessary to keep them clean.
Corrective action: Observed food debris on flooring, shelving, and equipment surfaces. Reviewed cleaning with person in charge.
