None — 16: 4-501.114(A)-(E),(F)(1)-(2) Chlorine sanitizing solution intended to sanitize food contact surface(s) did not have a concentration between 50-200 ppm along with the corresponding pH and temperature. Observed chlorine testing at 25 ppm at the kitchen and bar dish machine. Machines were primed and re-run and tested within approved concentration during inspection.
3-501.14 — Foods were not cooled from 135°F to 70°F within 2 hours or from 135°F to 41°F within 6 hours.
Corrective action: Observed cooked prime rib holding at 90°F and 103°F during the cooling process that surpassed the required time parameters. Prime ribs were discarded during inspection, see Voluntary Condemnation.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Observed in the bakery trays of vanilla pastry creme and chocolate pastry creme holding between 43-44°F for an unknown amount of time, items were discarded during inspection, see Voluntary Condemnation. Observed TCS foods in the prep table across from the ovens holding 44-48°F for less than four hours per person in charge. Cooler doors were closed to allow for temperature decline during inspection.
None — 33: 3-501.15(A) Unapproved cooling methods were used. Observed prepared sauces labeled lga and tcg actively cooling from ambient air with lids. Lids were removed during inspection to allow for air circulation during the cooling process.
