Corrective action: Observed one container of super greens next to the tortilla warmer in the main line at temperatures between 43-45°F in an ice bath. Per person in charge, lettuce should be 41°F or below and must be tossed if it goes beyond that based on company policies. Lettuce was discarded during the inspection, please see voluntary condemnation. Discussed with the person in charge about ensuring the ice bath fully surrounds the container of lettuce to promote adequate cold-holding parameters.

Corrective action: Observed the quaternary ammonium sanitizer solution below the recommended concentration range. Discussed with the person in charge that wiping cloths used to wipe down food contact surfaces must be held in an appropriate concentration of sanitizing solution. The sanitizing solution was remade during the inspection.
