3-202.15 — Cans/packaged food containers were dented or damaged.
Corrective action: Observed a can of jalapeno slices that had a severe dent in the middle of it. Discussed with the person in charge about monitoring cans for dents and discarding the ones that have severe dents which can compromise the integrity of the product. Discarded the can during the inspection, please see the voluntary condemnation.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold holding at internal temperatures greater than 41°F.
Corrective action: Observed raw beef being stored in a shallow ice bath. Spoke with person in charge about ensuring container is submerged in ice bath and new ice is frequently added during the day. More ice was added during inspection and beef was at proper temperature.
3-501.18 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety was not discarded within 7 days of preparation or opening of product.
Corrective action: Observed a small container of house made green chile ranch prepared on 08-22-26. Discussed with the person in charge that sauces made or prepared in house must follow the seven day date marking process. Green chile ranch sauce was discarded during the inspection, please see the voluntary condemnation.
3-501.13 — Foods were thawed using an unapproved method.
Corrective action: Observed frozen ground beef thawing in standing water. Discussed with the person in charge that when thawing meat using water, the product must be fully submerged and have water flowing to agitate particles off of the product and to ensure an even transfer of heat throughout it. The meat was moved into the walk in during the inspection to finish the thawing process.
3-302.12 — Working containers holding food or food ingredients that are removed from their original packages shall be identified with common name.
Corrective action: Observed a small container of green chile ranch without a label. Discussed with the person in charge about ensuring labels are present as a way to assist staff in product identification and to prevent possible cross-contact for allergens. Labels will be added with the common name moving forward.
6-501.112 — Dead or trapped birds, insects, rodents or other pests were not removed from the establishment often enough to prevent accumulation, decomposition, or the attraction of pests.
Corrective action: Observed several sticky traps with dead insects on them. Discussed with the person in charge about their schedule for pest control, and about ensuring that dead pests are consistently removed from the premise to prevent the accumulation of new pests.
3-304.14 — Wiping cloths were not held in a reasonably clean sanitizer solution of appropriate concentration between use.
Corrective action: Observed a hanging wiping cloth at the three comp sink being used to wipe down food contact surfaces. Discussed with the person in charge about ensuring wipe cloths are held in a sanitizing solution to prevent possible cross-contamination. Wiping cloths were moved during the inspection into a bucket.
4-602.13 — Nonfood contact surfaces of equipment were not kept free of an accumulation of dust, dirt, food residue and other debris.
Corrective action: Observed a buildup of grease along the sides of fryer in the kitchen as well as the floor. Spoke with person in charge about cleaning frequency for this item to prevent attracting pests into the establishment.
