None — 2: 2-102.12(A) The person-in-charge was not a Certified Food Protection Manager. Observed no employee on site that was a Certified Food Protection Manager. Discussed with the operator about the requirements and how to get certified. Inspector will provide study materials and course offerings.
2-501.11 — Written procedures for cleaning up vomit or diarrhea were not available or did not meet the requirements of the code.
Corrective action: Observed no written procedures at the time of inspection. Discussed with the person in charge that they had those procedures but may have been misplaced during the remodel. Inspector provided a handout during the inspection.
None — 15: 3-302.11(A)(1)-(2) Raw animal foods were not separated from ready-to-eat foods during storage, or preparation, to prevent cross-contamination. Observed raw shelled eggs above sealed condiment packages in the reach in cold holding unit by the soda machine. Discussed with the person in charge about moving the condiments to be above the eggs to prevent any possible cross contamination. Condiments were moved above the eggs during the inspection.
4-702.11 — Equipment, utensils, and/or food-contact surfaces are not properly cleaned and sanitized before use.
Corrective action: Observed the cleaning methods in the three compartment sink not being followed according to code. Discussed with the person in charge that the three compartment sink should be used as a deep wash of the dishes first, a rinse to follow the deep clean, and to finish with a sanitize step in order to ensure the dishes are being cleaned appropriately to prevent the growth of pathogens. During the inspection, the three compartment sink was set up properly and the proper sanitization concentration was reached after discussion about the proper manual warewashing methods.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Observed a small portion of shredded lettuce, shredded cheese, and diced tomatoes cold holding in the mini prep station around 44-45°F for more than four hours. Discussed with the person in charge about using metal trays to better facilitate the cold holding capabilities of the unit, and to ensure the lid of the cold holding unit is closed when not in use. Items were discarded during the inspection and metal trays were used for new food items. Please see voluntary condemnation.
3-501.17 — Refrigerated, ready-to-eat food(s) that require time or temperature control for safety and is held for more than 24 hours was not properly date marked.
Corrective action: Observed 1 half gallon of whole milk stored in second refrigerator longer than 24 hours with no date. Date was added to milk at time of inspection.
None — 33: 3-501.15(A) Unapproved cooling methods were used. Observed large quantities of green chile being left out to cool on the counter with an ice bath being used that didn't fully submerge the tub of chile. Discussed with the person in charge that using smaller bins will aid in the cooling process and to start the cooling process sooner to ensure it reaches the cooling time parameters from 135-71°F within two hours and from 70-41°F within four. An ice bath was set up and instruction was provided during the inspection.
None — 37: 3-602.12(C) Consumers were not notified of presence of major food allergens in unpackaged foods as required by the code. Observed no written notification of major food allergens present at the facility for consumers. Discussed with the person in charge about ensuring this notice is available to consumers, and that their original form was taken down during the renovation. Inspector provided a document during the inspection.
