Observed unapproved food grade sanitizer. Chlorine solution had a deodorizer added. Food grade sanitizer was purchased from local store.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Observed shredded cheese, pico salsa, and diced tomatoes holding at 51°F for less than 4 hours in the cold table unit. All items were moved to ice bins inside cooler. Person in charge will put in work order for repairing the cold table.
7-204.11 — Unapproved chemical sanitizers were used on food-contact surfaces.
Corrective action: Unapproved sanitizer was removed from kitchen.
4-301.11 — The equipment available is not capable of cooling, heating, or holding foods at the temperatures required by the code.
Corrective action: Cold table was holding at 45-51°F ambient air temperature. Person in charge will place a work order to repair cold table.
6-202.13 — Insect controlling devices shall not be located over a food preparation area.
Corrective action: Fly strip stored above food preparation table was move to the back door.
3-304.14 — Wiping cloths were not held in a reasonably clean sanitizer solution of appropriate concentration between use.
Corrective action: Observed no sanitizer in the wiping bucket. Spoke to person in charge about using a food grade sanitizer with no additives, and to keep the wiping cloths in the sanitizer solution when not in use.
