Corrective action: Observed previously frozen foods that had been thawed without updated date marking. Dates were added during inspection. Refrigerated, ready-to-eat food(s) that require time or temperature control for safety was not discarded within 7 days of preparation or opening of product. Observed diced tomatoes and salsa held past the 7-day date mark. Items were discarded during inspection, see Voluntary Condemnation.

Corrective action: Observed cooked chicken patties holding at 125°F in the warmer closest to the serving line and pizzas in multiple warmers holding at 118°F for less than four hours per person in charge. Time as a public health control was used during inspection as pizzas were planned to be served after multiple lunch services to students.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold holding at internal temperatures greater than 41°F.
Corrective action: Observed a pan of shredded cheese holding at 50°F on the serving line for less than four hours per person in charge. Time as a public health control was used during inspection as cheese was planned to be used by the end of lunch service for students.
4-501.11 — Utensils or equipment were not maintained in good repair or condition.
Corrective action: Observed one walk-in freezer non-operational in the kitchen and the ice machine in the coffee shop non-operational during inspection. Person in charge is aware of equipment status and plans for service and repair are in process.
