Corrective action: Observed employee not wash hands after prepping raw chicken and starting a new task. Spoke with person in charge about when to wash. Employees were observed failing to use the washing procedure required by the code when washing their hands. Observed employee not use soap when washing their hands. Spoke with person in charge about proper hand washing.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Observed, cooked chicken holding at 52 degrees F, cooked chicken wings holding at 45 degrees F, cooked pork holding at 51 degrees F, for less than 4 hours per person in charge. Items were placed in the walk in cooler.
4-301.11 — The equipment available is not capable of cooling, heating, or holding foods at the temperatures required by the code.
Corrective action: Cold holding unit in the food prep area was maintaining an ambient temperature of 53 degrees F. Person in charge moved all TCS food items to the walk in cold holding unit. Person in charge will have the unit maintenance.
3-305.11 — . Observed several food items in the walk-in freezer and walk-in cooler being stored directly on the floor and not stored at least 6 inches above the floor.
Corrective action: Person in charge placed items at least 6 inches above the ground during inspection.
