Corrective action: Observed opened gallon of milk with no date. Item was dated with a marker for 7 days after opening.
4-601.11 — (B), and (C) Nonfood contact surfaces of equipment were not cleaned at a frequency necessary to prevent the accumulation of soil residues.
Corrective action: Observed buildup food debris on walls throughout kitchen and on equipment on the hotline. Spoke to person in charge about implementing a deep cleaning schedule where equipment is moved and all surfaces are cleaned.
