2-301.14 — Employees were observed failing to wash their hands when required by the code.
Corrective action: Observed an employee cleaning dishes and proceed to take out the sanitized dishes before washing their hands. Discussed with the person in charge that when washing dishes, it is best to wash hands after finishing the rinse step and before taking out the dishes that have been soaking in the sanitizer. The employee proceeded to put the dish back in the sanitizer to soak and washed their hands.
3-501.14 — Observed prepared cold cut portions of lunch meat that were cooling from ambient around 45°F for more than four hours.
Corrective action: Discussed with the person in charge, that when cooling from ambient there is a four hour window that must be met to prevent an overgrowth of bacteria, and that removing the lid can assist the cooling process. Cold cut meat was discarded during the inspection. Please see the voluntary condemnation.
