2-103.11 — (A)-(O), and (Q) The person-in-charge did not perform their duties as required by the code, leading to violations in additional areas.
Corrective action: Cold holding, cooling and other priority violations were observed during the inspection. Spoke to person in charge about assuring the staff monitors the temperature of food cold holding and cooling methods, as well as preventing the contamination of food during storage.
None — 15: 3-302.11(A)(1)-(2) Raw animal foods were not separated from ready-to-eat foods during storage, or preparation, to prevent cross-contamination. Observed raw pork stored on top of a bag of cooked chicken tempura. Pork was move to a different freezer.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Observe cold holding violations in the 2-door cooler; 1) raw cut steak holding at 48°F prepared earlier in the day and 2) cooked chicken tempura holding at 54-58°F that was cooked the previous day. Steak was cooked immediately to the proper final cook temperature and the chicken tempura was discarded. See Voluntary Condemnation.
4-301.11 — The equipment available is not capable of cooling, heating, or holding foods at the temperatures required by the code.
Corrective action: Facility does not have a working walk-in cooler or freezer. Coolers are not sufficient to maintain temperature and cool cooked foods. Unapproved cooling methods were used. Chicken Tempura was cooling in a sealed bag with condensation visible in the domestic white freezer. Spoke to person in charge about approved cooling methods.
6-501.112 — Dead insects or other pests were not removed from the establishment often enough to prevent accumulation, decomposition, or the attraction of pests.
Corrective action: Spoke to person in charge about deep cleaning the floors behind ice machine and equipment.
3-303.11 — After used as a medium for cooling, ice may not be used a food.
Corrective action: Observed 2 gallons of sweet tea stored directly in the ice machine used for beverages. Containers were removed and ice was removed from the bin.
4-602.13 — Nonfood contact surfaces of equipment were not kept free of an accumulation of dust, dirt, food residue and other debris.
Corrective action: Observed buildup of food debris on the paper towel dispenser and other surfaces touched by hands in the kitchen. Spoke to person in charge about cleaning and sanitizing all paper towel dispensers and handles in the kitchen.
6-501.12 — Physical facilities were not cleaned as often as necessary to keep them clean.
Corrective action: Observed excessive food debris under the grill and on the floors throughout in the kitchen. Spoke to person in charge about increasing the cleaning of this area.
