Corrective action: Observed cooked sausage holding at 108-112°F for less than 4 hours. Sausage was discarded because breakfast was over.
3-501.16 — (A)(2) Food item(s) that require temperature control for safety were cold-holding at internal temperatures greater than 41°F.
Corrective action: Multiple items of dairy and eggs were holding at 52-60°F for more that 4 hours in the single door cooler. Items in cooler were discarded see Voluntary Condemnation.
7-204.11 — Poisonous or toxic materials were not used in accordance with manufacturer's directions.
Corrective action: Observed too strong of chlorine sanitizer spray bottle. Water was added to solution to correct the concentration. A working container storing poisonous or toxic material was found without a label identifying its contents. Spray bottle of sanitizer was labeled with a marker.
4-301.11 — The equipment available is not capable of cooling, heating, or holding foods at the temperatures required by the code.
Corrective action: Observed single door cooler holding foods at 52-60°F. This Cooler was repaired on the day before inspection. Repair was not sufficient in correcting ambient air temperature and is not approved for use. Fridge will be replaced with new unit.
